So when I was recently visiting my family down in Nashville for Easter, we went on long family walks in a gorgeous park at the end of our street. And after we all were sweaty and ready to eat something filling, my mom whipped up this super easy, super filling, and super healthy dish. Best part? If you make the batch {I like to double amounts required in this recipe} it will literally last you a week in your fridge! Talk about saving some money while getting all beach ready right? Hola! I love making this recipe after dinner and putting Saran Wrap over the dish before placing it in the fridge. Then after my workout the next morning, I’ll come home and it will be all ready! My favorite is putting a dollop on almond butter on top too.
